Leaner times call for creative ways to make it all work at the table – with equals amount of joy but without breaking the bank – and in Spanish wines sommeliers around the country have found an ally. They look into their tool boxes and share with Bruce Schoenfeld tips on how to help sales while building trust with patrons. Fresh from a visit to the Sherry triangle, Bonnie Graves looks into the fascinating world of Sherry, from its ancestral origins to its current darling status among the trade. From Fino to Oloroso to sweet Pedro Ximénez, education, she finds, is key to making consumers aware of its nuances. We hop over to Philadelphia to see how chef José Garcés does his part in educating devoted patrons of many cuisines, including Mexican, Peruvian and Spanish, to name just a few, with Spanish wines more often than not on center stage.
